Work on the plantation began. The site was on top of a hill. It dominated the plantation which looked like a primary forest.

 

" I remind that we are in a plantation grown with agroforestry principles.

The second crop was coming. Tamara decided to start the work. She started with the easiest and the more urgent: the air drying tunnel. If the hangar for fermentation was not finished, she could already dry her beans without doing the fermentation (which is what is done to 90% of the world volume of beans).

Masonry work started to lay the foundations of the fermentation hangar.

Tamara sprang into action. She had a great desire to provide me with my 2 first tons of fermented cocoa beans!

The hangar would be finished just in time to test the fermentation process. Tamara had this precious knowledge. She gave me some news regularly by sending some pictures. I felt like I was going to receive a treasure of cocoa…"
